    Peanut Butter And Jelly Muffins

    2 cups all-purpose flour
    6 tablespoons granulated sugar
    1 1/2 tablespoons baking powder
    1/2 teaspoon salt
    6 tablespoons crunchy peanut butter
    3/4 cup milk
    1/4 cup unsalted butter, melted
    1 egg, lightly beaten
    1/4 cup grape jelly or strawberry jam

    Peanut Butter And Jelly Muffins


    Preheat the oven to 400 degrees.
    In a mixing bowl, stir together the flour, sugar, baking powder, and salt.
    With a pastry cutter or a pair of forks, cut in the peanut butter until the
    mixture resembles coarse crumbs.
    Add the milk, butter, and egg and stir just until combined.
    Distribute the batter evenly among a dozen greased muffin cups. Spoon a scant
    teaspoonful of jelly or jam into the center of each cup.
    Bake the muffins until golden brown, 20 to 25 minutes.
    Makes 1 dozen muffins.
