Pineapple Muffins

PINEAPPLE MUFFINS
2 cups flour
2 teaspoons baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1/2 cup firmly packed brown sugar
1 egg, well beaten
8 oz. commercial sour cream
8 oz. crushed pineapple, UNDRAINED
1/3 cup melted shortening
1/2 cup chopped pecans
Combine first 5 ingredients in a large bowl; stir well. Combine egg, sour cream, pineapple, and shortening. Make a well in center of dry ingredients; add pineapple mixture, and stir just until moistened. Stir in pecans. Spoon into greased muffin pans, filling two-thirds full. Bake at 400 degrees for 20-25 minutes or until brown. Makes 18
