    Strawberry Muffins (II)

    STRAWBERRY MUFFINS

    2 1/2 cups Flour

    2/3 cup Sugar
    1 teaspoon Baking Soda
    3/4 teaspoon Cinnamon
    1/2 teaspoon Salt
    1 1/2 cups Fresh Strawberries -- sliced
    1 cup Milk
    1/3 cup Butter or Margarine -- melted
    1 1/4 teaspoons Vanilla
    2 Eggs -- lightly beaten

    Non-stick Cooking Spray OR paper liners

    2 tablespoons sugar

    Combine flour, sugar, baking soda & cinnamon in a large bowl, and stir well. Add fresh strawberries and mix well. Make a well in center of mixture and set aside. Combine milk, butter, vanilla & eggs in a medium bowl. Stir well. Add to dry ingredients, stirring just until moistened. Divide batter evenly among 18 muffin cups coated with cooking spray or lined with baking cups-- 1 scant ice cream scoop per muffin. Sprinkle 2 tablespoons sugar evenly over muffins. Bake at 350 degrees F for 25 minutes or until a tooth pick inserted in center comes out clean. Remove from pans immediately, then let cool on a wire rack.
