    Whole Wheat Popovers


    Ingredients:1 1/4 cups whole wheat pastry flour
    1 1/4 cups milk
    3 eggs
    2 tablespoons melted butter
    1/4 teaspoon salt
    Tablespoon cold butter, cut into pieces


    Instructions:Using an oven position the rack in lower third and preheat the oven to 400ºF. Spray popover pan using nonstick cooking spray. (If you do not have a popover pan you may use a jumbo muffin tin or custard cups.)

    In a food processor or blender place flour, milk, eggs, melted butter and salt and process the mixture until the batter is smooth and has the consistency of heavy cream. (You may also blend the batter in a large bowl with an electric mixer.) While the mixture is being blended preheat the popover pan by placing it in the oven for 2 minutes. As soon as the pan is removed from the oven place one piece of cold butter in each popover cup and return the pan back to the oven for an additional minute of until the butter melts.

    Place batter in each popover cup filling halfway and bake for 20 minutes. (Leave oven closed for opening may cause popovers to fall.) Reduce the oven temperature to 350ºF and bake popovers for an additional 20 minutes then remove them from the cups and cool slightly on wire rack, serving when warm.

    A delicious pastry that everyone is sure to enjoy.
