    Coconut Cherry Carrot Bread

    COCONUT-CHERRY-CARROT BREAD
    2-1/2 Cups Flour
    1 Cup Sugar
    1 tsp. Baking powder
    1 tsp. Baking soda
    1/2 tsp. Nutmeg
    1/4 tsp. Salt
    3 Beaten Eggs
    1/2 Cup Cooking oil
    1/2 Cup Milk
    1 Cup Graceland julienne sliced carrots
    3 1/2 oz. Flaked coconut
    1/2 Cup Graceland dried sweet cherries, chopped soak in water 15 min., drain


    Recipe

    COCONUT-CHERRY-CARROT BREAD

    Combine dry ingredients. Combine eggs, oil, and milk then add to dry ingredients, mix well. Stir in carrots, coconut, and cherries. Grease two loaf pans; pour batter into pans. Bake at 350 degrees for 40 to 50 minutes or till toothpick inserted near center comes out clean. Cool in pans 10 minutes. Remove from pans; cool thoroughly on wire racks. Wrap; store overnight before slicing. YIELD: 16
