Sift in separate bowl:
3 cups flour
1/2 tsp. soda
1/2 tsp. baking powder
1/2 tsp. salt
To wet mixture alternately (with flour mixture) add: 1 cup buttermilk (or 1 cup non-fat sour cream). Fold in small bag of coconut (about 2 cups). Pour into greased and floured loaf pans. Bake for 1 hour at 325ºF.
