    Eggnog Quick Bread

    2 eggs
    1 c sugar
    1 c dairy eggnog (not canned)
    1/2 c margarine or butter, melted
    2 tsp rum extract
    1 tsp vanilla
    2 1/4 c flour
    2 tsp baking powder
    1/2 salt
    1/4 tsp nutmeg

    Eggnog Quick Bread



    Heat oven to 350º. Grease bottoms only of a 9x5" loaf pan.* Beat eggs in a large bowl. Add sugar, eggnog, margarine, rum extract and vanilla; blend well. Lightly spoon flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan.Advertisement:

    Bake at 350� for 45-50 minutes or until toothpick comes out clean. Cool 10 minutes: remove from pan. Cool completely.
    *TIP: If desired, recipe can be baked in two 5 3/4x3 1/4" disposable or metal loaf pans, greased on the bottoms only. Bake at 350� for 35-40 minutes.
    Makes 1 loaf
