    Fruited Eggnog Bread

    2 eggs
    2 3/4 c flour
    3/4 c sugar
    1 Tbsp baking powder
    1 tsp salt
    1/2 tsp nutmeg
    1 1/2 c dairy eggnog
    1 egg, beaten
    1/4 c butter, melted
    1 Tbsp rum OR 1 tsp rum extract + 2 tsp water
    3/4 c nuts, chopped
    3/4 c mixed candied fruit

    Fruited Eggnog Bread


    Mix well first 5 ingredients. Stir in eggnog, egg, butter and rum just until flour is moistened. (Mixture will be lumpy) Fold in nuts and candied fruit; spread mixture in a well-greased 9X5 loaf pan. Bake at 350� for about 1 hour, or until a toothpick inserted into center comes out clean. Cool on rack for 10 minutes before removing from pan. Nice served warm.

    Makes 1 loaf
