    Poppy Seed Bread

    1½ cups vegetable oil
    2½ cups sugar
    3 eggs, beaten
    1½ teaspoons vanilla extract
    1½ teaspoons almond extract
    3¼ cups flour
    1 teaspoon salt
    2 tablespoons poppy seed
    1½ teaspoons baking powder
    1½ cups milk
    Topping (see recipe)

    Topping:
    1 tablespoon butter
    1/2 cup sugar
    1/2 teaspoon almond extract
    1/2 teaspoon vanilla extract
    1/4 cup orange juice

    Poppy Seed Bread



    Preheat oven to 350 degrees.

    To make bread: In large bowl, combine oil, sugar, eggs and extracts and mix well.


    In separate bowl, combine flour, salt, poppy seed and baking powder and mix well.

    Add flour mixture alternately to sugar mixture with the milk. Pour into three greased and floured 7½-by-3½-inch loaf pans or two 9-by-5-inch pans (half to two-thirds full).

    Bake in preheated oven 45 to 55 minutes if making large loaves, 35 to 45 for medium loaves, or until done. Remove from oven and cool in pans on rack 10 minutes, then invert and cool completely. Brush topping over cooled breads with a pastry brush. Makes 2 large loaves or 3 medium loaves.

    Topping:


    Combine ingredients in microwave-safe bowl or measuring cup and microwave on high (100% power) 1 to 2 minutes or until butter is melted and sugar is dissolved. Stir well before using to top bread.
