    CARROT CAKE.
    ************
    2 c. sugar
    2 c.. grated carrot
    3 c. flour
    1 1/3 c. oil
    1 1/2 tsp. vanilla
    1 sm. can crushed pineapple, drained
    2 c. nuts
    2 tsp. cinnamon
    2 tsp. baking soda
    Dash salt

    Mix dry ingredients, add carrots and liquid. Add eggs last. Bake at 325F. degrees for 1 1/2 hours for large pans and 1 hour for smaller pans.

    Glaze:
    1 1/2 c. sugar
    Juice from 2 oranges or 1/2 c. pineapple juice

    Mix as soon as cake is in the oven. Place on lowest possible heat. Stir often until sugar is dissolved. Let stand at room temperature until cake is finished. Spoon glaze over top of cake.
