Christmas Cake
Ingredients:
8 oz butter
8 oz soft brown sugar
4 large eggs
8 oz plain flour
4 oz glace cherries, quartered
1 tsp mixed spice
grated lemon rind
8 oz currants, washed and dried
8 oz sultanas
8 oz raisins
2 oz ground almonds
Method:
1. Preheat the oven to 150C/Gas 2. Grease a large square cake tin and line with greaseproof paper.
2. Beat the butter and brown sugar until creamy. Gradually add the eggs.
3. Sift the flour, mixed spice and ground almonds into the mixture and beat until well combined. Stir in the remaining ingredients.
4. Pour the mixture into the prepared tin. Bake 3 3/4 hours until the cake has risen and feels firm at the centre when lightly pressed with your fingertips. Remove from the oven and cool in the tin for 5 mins before turning out onto a wire rack.
5. Wrap up in a layer of waxpaper, followed by a layer of aluminium foil and keep in an airtight container. On a weekly basis, poke a few holes in the top of the cake with a cocktail stick and pour over a sherry glass of brandy. Decorate as desired.
