Orange Poppy Seed Cake

- 1/2 cup sugar
- 6 tablespoons margarine, softened
- 2 egg whites
- 1 egg
- 3/4 cup reduced-fat sour cream
- 2 tablespoons frozen orange juice concentrate, thawed
- 2 cups cake flour
- 2 tablespoons poppy seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
In large bowl, beat sugar and margarine until smooth and fluffy. Beat in eggs whites, egg, sour cream, and orange juice concentrate until smooth.
Mix in combined cake flour, poppy seeds, baking powder, baking soda, and salt; beat on medium-high speed until smooth, 1 to 2 minutes. Pour batter into greased and floured 6-cup fluted cake pan.
Bake cake at 350 degrees F. 40-55 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 25 to 30 minutes; invert onto wire rack and cool.
