PEACH CAKE SUPREME
MAKES ONE 10-INCH ROUND CAKE
INGREDIENTS
1 can (29 ounces) sliced peaches
1 cup all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter or margarine, softened
1 teaspoon vanilla extract
2 eggs
Filling (see below)
Topping (see below)
Prepare Filling and set aside. Drain Peaches, reserving 1 tablespoon syrup; set aside. For the crust, blend together the peach syrup, flour, sugar, baking powder, salt butter, vanilla and eggs in a large bowl. Beat at medium speed, scraping bowl occasionally, for 3 minutes. Spread evenly on bottom and sides of greased 10-inch pie pan. Pour in Filling and bake in preheated moderate oven (350° F.) for 25 minutes, or until crust is light golden brown. Top with drained peach slices. Prepare Topping and spoon over peaches. Bake 5 minutes longer, then chill.
Filling
In small bowl of electric mixer, combine 1/3 cup sugar, 1/4 teaspoon salt, 1/4 cup dairy sour cream, 1 egg and 1 package (3 ounces) cream cheese, softened. Beat at medium speed 3 minutes, or until smooth and creamy.
Topping
Mix well 1 cup dairy sour cream and 1/4 cup firmly packed brown sugar.
