CHOCOLATE POUND CAKE.

4c. All purpose flour
3c. Granulated sugar
1Tbsp. baking powder
1 1/2tsp. baking soda
1/2tsp. salt
2 1/2c. milk
1 1/2c. butter, softened
8oz. unsweetened chocolate, melted and cooled
5 eggs
1tsp. vanilla
1/2tsp. almond extract
Almond whipped cream
Toasted sliced almonds (optional)
Grease and lightly flour 10 inch tube pan. Set aside.
In an extra large mixing bowl combine flour, sugar, baking powder, baking soda and salt. Add milk, butter and cooled chocolate.
Beat on medium speed 2 minutes. Add eggs, vanilla and almond extract. Beat 2 minutes more.
Pour batter into prepared pan, spreading evenly. Use a knife to cut zigzag pattern through batter to break up any large air bubbles.
Bake in a 325 for 1 1/2 to 1 3/4 hours or until a tooth pick inserted comes out clean.
Cool in pan on a wire rack for 20 minutes. Remove cake from pan. Cool completely on wire rack.
Serve slices with almond whipped cream. If desired, sprinkle with toasted almonds.
ALMOND WHIPPED CREAM
In a chilled medium mixing bowl, combine 1 cup whipped cream, 2 Tablespoons granulated sugar, and 1/4 teaspoon almond extract or 1 teaspoon amaretto. Beat with an electric mixer on medium to high speed until soft peaks form.
