    Lemon Cake Pudding

    LEMON CAKE PUDDING


    Sift together:
    1/4 cup flour
    1 cup sugar
    1/4 tsp. salt

    Stir in:
    1-1/2 tsp. grated lemon rind
    1/4 cup lemon juice
    2 well beaten egg yolks
    1 cup milk

    Fold in:
    2 egg whites, stiffly beaten
    Pour into 8-inch buttered casserole and set in pan of hot water. Bake 40 minutes in moderate (350 degrees) oven. Serve either hot or cold. Can be spooned into sherbet glasses. Serve with cream.
