GINGERBREAD BISCOTTI.
3/4 lb. butter,
1 �c. white sugar,
6 eggs, 2 tsp. vanilla,
�c. molasses,
� tsp. cinnamon,
� tsp. ginger,
� tsp. cloves,
6�c. all-purpose flour,
� tsp. salt,
2 � tsp. baking powder,
2c. chopped almonds,
12 oz. white chocolate, melted (optional).
Instructions:
1. Cream butter and sugar together using electric mixer. Add eggs, one at a time until mixture is fluffy. Advertisement:
2. Add next 5 ingredients and blend well. Set aside.
3. In separate bowl, combine flour, salt, baking powder and almonds; add flour mixture gradually to egg mixture with wooden spoon until moistened. Dough will be very stiff.
4. Separate dough into 4 sections and form each section into loaf, 3"x12" long (dip fingers in hot water if dough gets sticky) and place loaves onto cookie sheets (2 loaves per sheet). Bake @ 350*F for 25-30 min. or until toothpick inserted in center comes out clean. Remove from oven and cool 20 min.
5. cut loaves crosswise into 1" slices, turn on cut side and return to oven, baking 10 min. on each side or until golden brown. cool completely.
6. Dip one cut side in melted white chocolate if desired; cool until chocolate hardens and store in airtight container.
