    Crust:
    1/2 cup butter or margarine, softened
    1 cup sifted flour
    1/4 cup powdered sugar

    Filling:
    2 eggs
    1 cup sugar
    2 t. flour
    1/2 t. baking powder
    3 T. fresh lemon juice
    Grated rind of 1 lemon
    Powdered sugar



    Recipe
    Cream butter, flour and powdered sugar. Pat into an 8" square glass dish. Bake in a preheated 350ºF oven until light brown, about 15 minutes. Cool.

    Beat eggs; add next 5 ingredients and pour onto cooled crust. Bake in a preheated oven until set, about 25 minutes.

    Cool at least 2 hours, then cut into squares. Dust with powdered sugar.

    Variation: Can easily be doubled and baked in a 13 x 9" pan.

    Makes 16 squares, each 2".
