Asparagus Oatmeal Raisin Cookies
1 cup cooked mashed Michigan asparagus (save the cooking water)
1 cup raisins
1/2 cup liquid (use the cooking water for added nutrients
3/4 cup butter (or for lower fat, try applesance)
1 cup brown sugar or 3/4 cup honey
1 egg, beaten
1/2 teaspoon salt
1 teaspoon vanilla
1-1/2 cups flour
1 teaspoon baking soda
1-1/2 cups rolled oats
Beat butter (or applesauce), salt, vanilla, sugar, egg. Add flour and soda. Stir until moist. Add cooled asparagus and raisins. Mix well. Add oatmeal. Drop by tablespoonfuls on greased cookie sheet. Bake at 325° for approximately 12 minutes.
