    CHRUSCIKI
    Christine's chrusciki:

    3 Cups Flour PLUS extra flour on side for rolling
    1 tsp salt
    6 egg yolks only
    1 Cup sour cream
    1 TBLSP. Brandy OR vanilla

    Mix 3 C flour w/tsp. salt. Add egg yolks 1 at a time then sour cream, then brandy OR vanilla.
    Knead all ingredients for about 15 minutes. After 15 minutes, cut through the center of the dough with a sharp knife. You should see pin holes in the dough and if you do, it is ready. If not, keep kneading in 5 min. intervals and repeating the knife process until you see the pin holes. It should be sponge like and you should not have to knead for more than 25 min. Of course, humidity may be a factor. Take a small amount of dough at a time and roll out on a well-floured board until it's paper thin. Cut rolled out dough into strips appx. 2 x 6 and put a slit in the center. Pull one end through the slit so it forms a "bow tie". Continue rolling and cutting small amounts & repeat process. Keep all unfried strips & dough covered with plastic wrap until ready to fry. Avoid letting them get too dry before frying. Use Crisco shortening for best results. Use a 3lb can. Fry strips in hot (365 degrees) crisco for 1 minute. Drain on paper towels in a baking pan till cool.

    Sprinkle confectioners sugar on top of cooked strips by passing sugar through a sieve or a sifter. If someone can help you, one can fry while the other one rolls & cuts. I keep it unrefrigerated covered with foil
