LEMON PIE IN MERINGUE SHELL
3 egg whites
1/4 t. cream of tartar
1 1/2 c. sugar, divided
4 egg yolks
3 T. lemon juice
1 T. grated lemon peel
1/8 t. salt
2 c. heavy whipping cream, whipped, divided
Place egg whites in bowl; let stand at room temp. for 30 min. Add cream of tartar; beat until soft peaks form. Gradually add 1 c. sugar, beating until stiff peaks form. Spread on the bottom and up sides of greased 9" pie plate. Bake at 350 for 25-30 min. Cool. In saucepan, combine yolks, lemon juice, lemon peel, salt and remaining sugar. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat. Cool to room temp. without stirring. Fold half of whipped cream into lemon filling; spread in meringue shell. Top with remaining whipped cream. Refrigerate leftovers.
