Lemon Meringue Pie
Ingredients:
1 1/3 cups sugar
1/4 cup cornstarch
1/2 teaspoon salt
1 2/3 cup water
3 egg yolks, slightly beaten (reserve whites)
2 tablespoons butter or margarine
2 tablespoons lemon zest (the part of the rind)
1/2 cup freshly squeezed lemon juice
1 baked pie crust
Directions:
Heat the oven to 400 degrees.To make filling: In a medium saucepan, combine sugar, cornstarch, and salt. Stir in water until smooth and cook over medium heat until mixture boils and thickens. Boil 1 minute, then remove from heat. Beat egg yolks until lemon-yellow. Mix a small amount of hot mixture into the egg yolks, then stir the egg yolks back into the hot mixture. Cook just until mixture begins to bubble, stirring constantly. Remove from heat, stiring the butter, lemon zest and juice. Pour into baked pie crust. To make topping: Beat room-temperature egg whites with cream of tartar. Add sugar gradually, beating until stiff peaks form. Spread the meringue over hot lemon filling, all the way to the edges to help prevent it from shrinking. Bake for about 10 minutes. Cool until set. Makes 6-8 servings.
