    Salmon Salad

    2 cups cooked and flaked salmon
    2 hard boiled eggs, crushed
    1 red or green bell pepper, diced
    1 cucumber, peeled, seeded and diced
    1/4 cup onions, chopped
    4 to 5 tablespoons mayonnaise, or enough to moisten
    ¼ teaspoon cayenne pepper, (optional)
    salt and pepper to taste
    juice of 1/2 lemon

    Salmon Salad

    In a large bowl lightly toss salmon and crushed boiled eggs. Mix bell pepper, cucumber, onions, and mayonnaise together. Add seasonings. Pour over fish, squeeze lemon over dish and toss lightly. Serve over lettuce or as a sandwich.
    Yield: 4 servings
    Preparation time: 10 minutes
