    ALMOND QUICHE
    (Yield: 6 servings)
    2 tablespoons butter or margarine
    1/2 cup chopped onion
    2 eggs, lightly beaten
    1 cup milk
    1 cup half-and-half
    1 tablespoon all purpose flour
    1/4 teaspoon white pepper
    1-1/2 cups shredded Swiss cheese
    1 cup sliced almonds
    1 9-inch pie shell, baked

    Preheat oven to 325°F.

    In a large skillet, melt butter; add onions and sauté until tender.


    In a small bowl, combine eggs, milks, flour, and pepper; beat until frothy. Stir into the cooked onion; add cheese and almonds until well mixed. Pour the mixture into prepared pie shell.

    Bake for 45 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before slicing.
