TROPICAL FRENCH TOAST SANDWICHES

Ingredients:
1 package (8 ounces) cream cheese, softened
1 jar (18 ounces) apricot preserves, divided
1/2 cup chopped walnuts
16 slices firm white bread
1 cup whipping cream
3 eggs, beaten
2 teaspoons vanilla
1/4 cup butter
3 tablespoons orange juice
4 bananas, sliced
Cooking Directions:
Combine cream cheese, 2 tablespoons preserves and nuts, mixing until well blended. Spread over half of bread slices; cover with remaining bread slices. Combine cream, eggs and vanilla, whisking until well blended. Dip both sides of each sandwich in cream mixture. Melt 2 tablespoons butter in large skillet over medium heat. Cook sandwiches in skillet until golden brown on both sides, adding more butter as necessary. In small saucepan, heat remaining preserves with orange juice until hot. To serve, cut each sandwich into quarters; arrange four on each serving plate. Top with bananas and hot preserve mixture.
