CRANBERRY-ORANGE SAUCE
1 (12-oz.) bag fresh cranberries
1 large orange (or 2 small)
1 to 1.5 cups sugar (varies with the ripeness of berries)
1 to 1.5 cups orange juice
1 small cinnamon stick (optional--tastes fresher without it, spicier with it)
Finely grate the zest (orange part) of the orange rind.
Add to the cranberries in a saucepan, toss in cinnamon stick (if used), and squeeze the orange juice over all. Add just enough additional orange juice to become visible among the cranberries (you can add more later if you need). Pour in 1 c. sugar and simmer on low about 30 min., stirring occasionally and mashing berries a bit with the back of the spoon. When mixture has
thickened somewhat and berries have collapsed, taste for sweetness. Add sugar as you wish, remove cinnamon stick, and chill. Makes about 2 1/4 cups.
