Hot Hominy Casserole
1 stick butter or oleo
1 large onion, chopped
1 pound mexican velveeta cheese
1 can cream of celery soup
1 4oz jar piementos
3 cans white hominy, rinsed and drained
Saute butter and onion.
Add cheese and stir til melted
Add soup and piementos
Pour over hominy
Pour into oiled casserole dish
Put crushed cracker crumbs on top
Bake at 350 for about 1 hour.
Usually use the mexican mild cheese. Recipe
