    Roasted Peppers (II)

    ROASTED PEPPERS.
    ****************
    6 lrge. red peppers
    1/4 C. olive oil
    1 lg. clove garlic
    1 T fresh lemon juice
    1 T. minced fresh parsley
    Pinch of freshly ground pepper

    Roast peppers under broiler until skin becomes charred, turning to char all surfaces. Place in brown paper bag until cool. Peel skin, core and cut into strips. Combine remaining ingredients and blend well. Spoon over peppers. Marinate several hours. Serve at room temperature. Advertisement:
