    Roasted Beets

    small beets - one to two inches in diameter
    olive oil
    salt and pepper for seasoning
    garlic, finely minced
    fresh rosemary, also finely minced
    Spanish sherry vinegar

    Preheat your oven to 350 degrees.
    Wash beets well, scrubbing any dirt off, but don't peel them; trim the woody tops off as well as the root end.
    Slice them in half lengthwise (if your beets are bigger, quarter them) and then in a baking dish, toss the beets with a bit of olive oil and the salt and pepper. Place them in the oven uncovered for about 45 minutes to 1 hour, turning them occasionally. When the beets are cooked, remove them and let them cool a bit, and then toss with the minced garlic and rosemary, a bit more extra virgin olive oil, and a few drops of the sherry vinegar.
