Scalloped Pineapple
INGREDIENTS:
1 cup butter
2 cups sugar
4 eggs, beaten
1/4 cup milk
4 cups white bread cubes
1 can (20 ounces) crushed pineapple
PREPARATION:
Cream together butter, sugar, and eggs. Stir in remaining ingredients and blend well. Place in a buttered 11x7-inch baking dish; bake at 375° for 15 minutes, then at 350° for about 50 to 60 minutes.
Serves 6 to 8.
Pineapple Casserole
1 large can pineapple chunks, drained
1 c. white sugar
1 stick butter, melted
1/2 tube Ritz crackers, crushed
1/2 flour
Mix together pineapple, sugar, & flour and place in small, greased baking dish. Pour melted butter ontop. Top with crushed crackers and bake at 350 degrees for 35 min. add more crackers halfway through. serve warm. Excellent with ham.
