    Sweet Potato and Apple Casserole


    List of Ingredients

    5 sweet potatoes

    5 granny smith apples - peeled and sliced about 1/4 " thick

    mini marshmallows

    1 cup orange juice







    Instructions


    Preheat oven to 350 degrees

    Boil the potatoes, let them cool then peel and cut into slices about 1/4" thick
    Use butter (or Crisco) on the interior of a casserole dish (bottom and sides)
    Layer sweet potato then apple then sweet potato then apple to the top (ending with apple)


    Pour the orange juice over everything
    (the level of orange juice will depend on the size of your casserole dish - not normally more than 1 cup)
    Cover and cook for 1 hour
    Pull the lid off, add a layer of mini-marshmallows, put back into oven so they can brown, you can put under the broiler for a quick brown
