    Biscuit Tortoni

    1/2 cup crushed macaroons
    1/2 cup crushed toasted almonds
    1/4 cup confectioner's sugar
    2 Cups heavy cream
    3 Tbs dark rum
    3 or 4 maraschino cherries

    Instructions
    Mix the macaroons, most of the almonds, the sugar and 1 cup of cream together.

    Whip the remaining cream and fold it and the rum into the first mixture, stirring gently.

    Spoon the mixture into paper muffin cups and freeze for 2 hours.

    After about 2 hours, sprinkle with remaining almonds. Put 1/2 cherry into the middle of each for decoration and return to the freezer.

    Makes 6-8 servings.
