Crab Cakes
**Optional jalapeno chopped**
1/3 cup Fresh made mayonnaise
1 ½ tablespoons Dijon mustard
2 large eggs
2 tablespoons Lemon juice, freshly squeezed
1 teaspoon Old Bay seasoning
½ cup Fresh soft bread crumbs
2 tablespoons Fresh parsley, chopped
2 tablespoons Green onion, finely chopped
1 teaspoon Zest of fresh lemon
1 pinch of Cayenne pepper
2 teaspoons Prepared horseradish or 2 teaspoons Worcestershire sauce (I prefer horseradish)
2 pounds Fresh lump blue crab meat
Salt and black pepper, to taste
Flour
Clarified butter or peanut oil for sautéing
Combine all ingredients except crabmeat. Taste and adjust seasoning. Gently fold into crabmeat. Portion into 3 ½ ounce cakes. Lightly flour, sauté in clarified butter or peanut oil. Serve immediately. Serves 6.Recipe
