    Scalloped Lobster

    4 small (1 1/4 pounds) boiled lobsters
    2 tablespoons butter
    2 tablespoons flour
    1 cup chicken broth
    Salt, Red Pepper, Paprika to taste
    1/2 cup cream
    2 egg yolks
    1/2 cup sherry wine
    Bread crumbs with butter

    Remove meat from cooked lobsters and cut into small pieces. Make a dressing of butter, flour, chicken broth and seasoning. Simmer a few minutes and then add cream and beaten egg yolks. Stir constantly until thick and smooth. Mix the lobster meat, while hot, in this dressing, then stir in the sherry wine. Put it in shells, previously prepared; fill them up, and put crumbs over them with a little butter. Bake in 400� oven until brown. Makes 4 servings.
