    Gingered Fruit Salad
    (MUST be made 24 hrs in advance)

    1 can ( 20 oz ) pineapple chunks,, drained
    1 package ( 16 oz ) frozen UNsweetened peach slices thawed
    1 cup of coarsely chopped fresh pear ( about 1 medium pear)
    1 cup of coarsely chopped apple
    1/2 cup of honey
    2 tablespoons orange juice concentrate, thawed
    2 teaspoons ground ginger

    In a large bowl, combine first 4 ingredients. In a small bowl , stir together
    remaining ingredients. Pour over fruit; toss until well blended. Cover and refrigerate
    8 hours or overnight. Served chilled
