TROPICAL FRUIT SALAD WITH PINA COLADA DRESSING

To make the fruit salad:
1 cantaloupe (rockmelon)
2 papayas (pawpaws)
10 oz fresh lychees
4 kiwi fruits

To make the dressing:
1 lb pineapple flesh
1/3 cup coconut Milk
2 tablespoons white rum

TO MAKE THE DRESSING:
Place the pineapple in a food processor and process to a puree. Strain through a sieve.
