    Strawberry Roll-ups


    Ingredients:
    3 cups (approximately) fresh strawberries
    1 tablespoon lemon juice
    1 tablespoon light corn syrup

    Strawberry Roll-ups




    Directions:
    Puree strawberries in a blender until smooth. Measure 2 cups of puree and stir in lemon juice and corn syrup. Line a 15x10x1 inch jellyroll pan with heavy plastic wrap and tape at corners. Spread strawberry mixture onto plastic leaving 1 inch margins on all sides. Dry in dehydrator or low oven (150 degrees) for 7 to 8 hours or until surface is dry and no longer sticky. Remove leather while still warm and begin rolling from the narrow end. Cut into five 2 inch logs and wrap securely with plastic. This treat was a favorite of pioneers. Enjoy!


    Notes: If necessary to adjust pan size, maintain puree thickness as above. May also dry outside on dry, sunny days.

    Variations: Use puree of peaches, apples, bananas, apricots, or any combination of fruits. This is a good way to use overripe fruit
