Beef Stroganoff
1 1/2 lb steak filet, cut into 1/4 in. slices, then cut into 1/2 in. strips
2 tbsp butter
2 onions, finely chopped
1 lb button mushrooms, sliced
salt & pepper to taste
2/3 cup of water
2 beef stock cubes, crumbled
2 tbsp tomato paste
1/2 cup sour cream (optional-use light sour cream)
1/2 tsp cornstarch

Beef Stroganoff
Melt half of the butter in a large frying pan. Add the beef strips to the pan in small batches and cook very quickly until golden brown. Remove from the pan immediately and set aside. Repeat this procedure with the remaining meat. Add the remaining butter to the pan. Put in the onion and saute gently until it just starts to turn brown. Add the mushrooms and cook until tender. Return the beef to the pan and add the salt & pepper, water, beef stock cubes, and tomato paste. Stir until well combined. Bring to a boil, reduce the heat, and simmer covered for approximately 5 minutes. In a separate bowl, add the sour cream and cornstarch and stir until well combined. Gradually add this to the meat mixture, stirring until it boils and thickens. Reduce the heat and simmer uncovered for 5 minutes.
