    CHICKEN FRIED STEAK

    1 Lb. Cube Steaks (1 piece per person)
    1 egg
    1/2 cup milk
    2 cups flour
    Salt and PepperOil for frying

    Mix milk and egg in shallow bowl, in seperate bowl mix flour, salt and pepper. Dip each steak in the egg mixture and then dredge in flour, repeat for a double coat. Place the steaks on a plate and put back in the refrigerator for about 10 min to allow the crust to set up. When you remove the steaks, dredge in the flour one more time to cover any wet spots. Pour about 1/2 inch oil in a large, heavy skillet, heat on med high heat until oil is sizzling, place steaks in skillet, close together, but not overlapping. Fry for about 7-8 min or until golden brown on the bottom, flip and cook 7-8 min more or until second side is golden brown. If necessary, add more oil as needed.Remove steaks to a plate lined with paper towels. If gravy is desired, pour off any excess oil leaving approximately 1 tablespoon oil and drippings, add 1 tablespoons flour, stir until mixed with the drippings. Add 1 cups milk, stirring slowing while adding the milk. Bring to boil, add additional milk until the gravy is as thick or thin as you prefer. Serve with rice or mash potatoes
