CITRUS GLAZED RIBS
Ingredients
8 - 10 pounds baby back ribs
Fine sea salt and freshly ground pepper, to taste
4 tablespoons EACH chopped onion and chopped orange zest
6 tablespoons EACH freshly squeezed orange juice, white wine vinegar, honey, and tomato paste
� teaspoon or more hot sauce Recipe
CITRUS GLAZED RIBS
Directions
1. Rub the ribs generously with salt and pepper. Lay them close together on a rack in a shallow baking pan over � inch water. Cover with foil and seal. Bake the ribs in a preheated 325� oven about 30-40 minutes, until tender.
2. Transfer the ribs to a platter, and deglaze the pan juices. Pour the juices into a saucepan, and add all the remaining ingredients. Simmer the sauce over medium heat, stirring occasionally, until slightly thickened, about 5 minutes. Puree in a blender or food processor until smooth. Taste, and adjust seasonings (more hot sauce, honey, salt, etc.)
3. Preheat your grill until very hot, then adjust burners to the lowest setting. Brush sauce over the ribs and place them the grill. Turn the ribs and brush them with more sauce every few minutes until they're glazed.
