Melt-in-your-Mouth Pot Roast
4 lbs rib roast or rump roast
salt and pepper
1/4 cup butter
2 bay leaves
8 medium sized whole onions, peeled
2 cups carrots, chopped
6 medium sized potatoes, cut in halves
1 dozen large mushrooms

Melt-in-your-Mouth Pot Roast
(Serves 8).
Preheat oven to 400 degrees Fahrenheit. Rub entire pot roast with Montreal steak spice, salt and pepper. Place in large roasting pan (must have a lid available). Add 1/4 cup butter on top of roast. Throw in bay leaves. Roast in oven, uncovered, for one hour. After one hour, reduce the heat to 375 degrees Fahrenheit. Place whole onions around the pot roast and put back in oven for another hour, covered with a lid. After the hour, add carrots and potatoes and put back in oven, covered for one more hour. Add mushrooms and cook for half an hour more. Take roast out of oven and let sit for five to ten minutes. Place pieces on a platter (you'll note that the meat is so tender, that it will fall apart when sliced). Add a bit of the drippings on top, and place the vegetables around it. Add the remaining drippings in a gravy dish and serve.
