Mustard Peppercorn Steak
(Serves 4).
1/2 cup Dijon mustard
4 tbsp parsley, finely chopped
1 tsp salt
2 tbsp peppercorns, coarsely crushed
3/4 cup dried bread crumbs
4 (8-oz) sirloin steaks, lean
3 tbsp vegetable oil
16 button mushrooms, cut in half
2 large cooking onions, thinly sliced

Mustard Peppercorn Steak
In a bowl add the Dijon mustard, parsley, salt, and crushed peppercorns and stir the entire mixture until it is well blended. Spread the mustard mixture over the steaks. Coat the steaks with the bread crumbs, pressing firmly to help the crumbs stick. Set aside. Heat 2 tablespoons of oil in a frying pan over medium heat. Add the steaks and cook 5 to 8 minutes. Turn carefully and cook another 5 minutes for medium-done steaks. Remove steaks from the pan and cover loosely to keep warm. Increase heat to medium-high and add the mushrooms and onions to the pan (adding remaining oil if necessary). Cook, stirring frequently, until soft-approximately 5 minutes. Serve the steaks smothered with mushrooms and onions.
