Paprika Beef with Mushrooms and Red Peppers
(Serves 4).
3 tsp vegetable oil
1 lb lean strip loin steak, remove excess fat, cut into small, stir fry strips
1 tbsp sweet paprika (Hungarian)
1/4 tsp caraway seeds, crushed
1/4 tsp marjoram
1/4 tsp dry mustard
salt and freshly ground pepper to taste
1 large onion, thinly sliced
4 cups button mushrooms, cut into halves
1 red pepper, thinly sliced
3 cloves garlic, minced
1 tbsp flour
3/4 cup beef stock
1/4 cup light sour cream

Paprika Beef with Mushrooms and Red Peppers
In a large frying pan, heat half of the oil over high heat and stir-fry the beef in batches for a few minutes until browned but still pink inside. Set aside along with the pan juices and keep warm. Add the paprika, caraway seeds, marjoram, dry mustard, and salt & pepper to the pan: cook over medium to high heat, constantly stirring, for approximately 30 seconds. Add the remaining oil, onion, mushrooms, peppers, and garlic: cook, stirring often, for about 5 minutes until lightly browned. Sprinkle with flour. Pour in the beef stock, stir, and cook for a couple of minutes until thickened. Add the sour cream. Return the beef and its juices to the pan and cook for approximately 1 minute or until heated through. Voila!! Serve over noodles or rice.
