Apricot Chicken a l'Orange
Sweet and moist and tender. This would be good with just about any chicken parts you like.
1 1/2 pounds Chicken breasts ; boneless and skinless
8 ounces Italian dressing
1 envelope Recipe Secrets onion soup mix
1/2 cup Water
1 11 ounce jar Apricot preserves
1 11 ounce can Mandarin Oranges ; in light syrup -do not drain

Combine all ingredients except for chicken.
Place chicken in a large casserole dish. Pour marinade over chicken and marinate for at least two to three hours.
Preheat oven to 350 degrees.
Bake for one hour covered. Uncover and continue baking until chicken browns.
Serve over rice.
