    Basic Chicken Saute with Honey-Orange Sauce
    Time: Chicken 7 min;
    Sauce 8 min
    Note:
    Timing for sauces presumes some prep was done while chicken was cooking.
    Suggested accompaniments take 15 minutes or less to prepare.
    Basic Chicken Saute with Honey-Orange Sauce
    2 Tbsp flour
    1/4 tsp salt
    4 boneless, skinless chicken-breast halves (about 5 oz each), tenderloin (also called a tender or fillet) removed

    2 tsp oil, preferably canola
    Basic Chicken Saute:
    1. Mix flour and salt in a plastic food bag. Add chicken, close bag and shake to coat evenly.

    2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook, turning once, 5 minutes or until golden and opaque near center. Remove to a serving plate.

    3. While chicken cooks, prepare sauce.

    Honey-Orange Sauce:
    Good with: Steamed baby spinach and couscous with raisins.

    1 tsp freshly grated orange peel
    1/2 cup fresh orange juice
    1/2 cup canned 99% fat-free chicken broth
    1 Tbsp honey
    1 tsp minced garlic
    1/4 cup chopped parsley

    1. Add orange peel, juice, broth, honey and garlic to skillet. Boil gently 4 minutes or until slightly thickened.

    2. Stir in parsley; spoon over chicken.
