Chicken Piccata
1 pound boneless chicken breasts -- pounded 1/4" thick
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
1 tablespoon oil
3/4 cup reduced sodium chicken broth
3/4 teaspoon rosemary
1 tablespoon lemon juice
1 tablespoon butter
Season chicken with salt and pepper. Dredge in flour. Saute chicken in oil over med-high heat 4 to 6 mins. Remove and keep warm. Add broth and rosemary. Boil to reduce by half. Stir in lemon juice and butter until it melts. Return chicken to skillet. Heat through.
