Cranberry Chicken
2 boneless, skinless chicken breasts with all visible fat trimmed
bread crumbs
cooking spray
nutmeg
ground cloves
1 cup cranberry juice (can be a cranberry blend)
1 cup of fresh cranberries (whole or chopped) OR 1/2 cup of cranberry sauce (jellied or whole berry)

Cranberry Chicken
1. Spray frying pan and covered microwave baking dish with cooking spray.
2. Coat chicken with bread crumbs. Place in frying pan and saute until golden brown (about 3-4 minutes on each side)
3. Transfer chicken to microwave baking dish. Sprinkle LIGHTLY with nutmeg and cloves. Add cranberries or cranberry sauce on top of chicken. Add cranberry juice to dish.
4. Cover dish. Cook in microwave at 60% for 15 minutes, turning dish 1/4 turn halfway through.
5. When cooking is done, let chicken sit covered for 3 minutes.
Serve with rice, noodles, or potatoes and your favorite veggies.
