    Easy Chicken Cor-don-Bleu

    Take a boneless, skinless chicken breast, and rinse thoroughly. Lay it on a flat surface and cover with plastic wrap. With your meat mallet, pound it to flatten it without tearing it to shreds. Place a slice of swiss, (or your favorite cheese) on top, followed by a slice of your favorite ham. (Use lunchmeat size slices from your deli). Roll the chicken including the cheese and ham, starting from one end to the other and hold in place with toothpicks. Place each chicken roll in a pre-sprayed roasting pan. Sprinkle with seasoned bread crumbs, and bake in oven at 350 for about 1 hour, or until chicken is done. (It was an hour yesterday.)

    Easy Chicken Cor-don-Bleu

    While the chicken is baking, prepare a cheese sauce for over the top. You can use pre-made Alfredo sauce from the grocery, or make one of your own using cream or half and half, butter, and various cheeses. Yesterday I made a homemade sauce using grated romano, swiss, and cheddar cheese. When the chicken
    is done, serve with the cheese sauce over the top.
