    Elegant Orange Chicken

    1/2 C flour
    1/2 t salt
    1/4 t pepper
    3 to 3 1/2 lb. chicken, cut up
    2 T vegetable oil (I used olive oil)
    3 C sliced mushrooms (about 8 oz)
    1/4 C orange juice
    1/4 C almond-flavored liqueur or orange juice
    2 T sliced almonds
    2 T chopped fresh cilantro or parsley

    Elegant Orange Chicken

    Mix flour, salt and pepper. Coat chicken with flour mixture. Heat oil in 12" skillet or dutch oven over medium heat until hot. Cook chicken in oil about 15 minutes, turning now and then, until golden brown. Cover and cook over low heat about 20 minutes or until done. Remove chicken from skillet using tongs and keep warm.

    Drain all but 1 T drippings from skillet. Cook mushrooms in 1 T drippings over medium heat about 2 minutes, stirring occasionally, until tender. Remove mushrooms from skillet. Heat skillet over medium-high heat. Add orange juice and liqueur. Cook 1 to 2 minutes, stirring constantly and scraping up any brown bits, until mixture is slightly thickened. Stir in mushrooms; heat through. Serve mushroom mixture over chicken. Sprinkle with almonds and cilantro. 6 servings.

    I used what I had available, which was chicken thighs instead of a whole chicken, triple sec instead of almond liqueur (it is orange flavored instead of almond), canned mushrooms instead of fresh. I didn't have any almonds, so I skipped those, and we don't like cilantro so I skipped that. (Didn't have any parsley, either). Do y'all cook like I do? Use a recipe, but change it around to fit your tastes or what is on hand? This turned out yummy, even though I didn't follow the recipe exactly. Hope you like it! I served it with rice and green beans.
