    French Onion Soup
    . (Serves 4 to 6).

    4 to 5 large yellow onions, peeled and sliced thinly
    3 tbsp butter or margarine
    1/4 tsp black pepper, coarsely ground
    1 tbsp all purpose flour
    3 cans beef broth (1 can = 10 3/4 oz size)
    3 cups water
    1 bay leaf
    salt and pepper to taste
    6 to 8 slices French bread
    2 tbsp Parmesan cheese
    1 cup Gruyere or Swiss cheese, grated

    . (Serves 4 to 6)


    Heat butter or margarine in a pot over high heat until butter/margarine melts. Add onions and ground pepper. Sauté, stirring frequently with a wooden spoon until onions are a light golden brown colour. Sprinkle with flour and stir until all the flour disappears. Cook for another minute, stirring constantly. Remove from heat. Gradually add beef broth, stirring the onion mixture constantly. Stir in water and bay leaf. Return to moderately high heat and bring mixture to a boil, stirring constantly. Reduce heat to low and cook the onion soup, uncovered for 30 to 40 minutes.

    Discard the bay leaf. Add salt and pepper to taste. Pour soup into individual onion soup bowls and place bowls on baking pan. Toast the French bread slices in a toaster or under the broiler until they are a light, golden brown colour. Arrange the toast slices on top of the onion soup (do not push them down under the soup). Sprinkle Parmesan and Gruyere or Swiss cheese on toast liberally. Place under broiler or in an oven, preheated to 425 degrees Fahrenheit. Broil or bake the soup until the cheese melts and turns golden. Remove from oven and enjoy!
