Grandma's Famous Cheesecake
Recipe Introduction
This is my Grandmother's famous cheesecake. It is not like any cheesecake you have ever eaten. It is dense, sweet and very wet. My grandmother always used the world finest chocolate that she bought from the catholic schools kids selling their fundraiser, she would only use the church chocolate. I think she was right, but if you don't have those bars use bittersweet chocolate
List of Ingredients
3 lb. Ricotta
2 lb. Sugar (4 cups)
2 dz. eggs
Rind of a orange, tangerine, and lemon
2 shot glasses of Anisette (which is 2 very small bottles
of the liquor)
1/2 lb. chocolate grated with food processor
You can use bittersweet chocolate 2 boxes or 7
world finest chocolate bars milk and dark
chocolate
1 tsp cinnamon
1 tsp allspice
1 qt. milk
Recipe
Beat eggs with electric mixer in large bowl. Add all remaining ingredients one at a time and mix well.You may have to pour mixture in a very large bowl and use hand mixer to beat as it probably will not all fit in the KitchenAid Pour mixture in large buttered baking pan 12 x 18 x 2 ( half sheet pan)
Bake in oven 325 degrees for at least 2 - 3 hours. When center is dry (test with a toothpick) remove from oven and let cool. Cut into squares and serve with a good cup of demitasse coffee
